These fantastic brownies are very moist and so good! The moisture comes from the zucchini, and you can’t even taste it after it’s been baked. This recipe is not too sickly sweet which is how I like my brownies and there is a slightly salty tang that I found very delightful! What you need
½ cup vegetable oil
1 ½ cups white sugar
2 teaspoons vanilla extract
2 cups plain flour
½ cup cocoa powder
1 ½ teaspoons baking soda
1 teaspoon salt
2 cups shredded zucchini
½ cup chopped walnuts

What to do

Preheat oven to 175°C. Line a 23 x 33 cm baking pan with baking paper.

In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flour, cocoa, baking soda and salt; stir into the sugar mixture. At this point it will look super dry. Fold in the zucchini and walnuts and the mixture will become extremely moist. Spread evenly into the prepared pan.

Bake for 25 to 30 minutes, until brownies spring back when gently touched.  Cool brownies for 10 minutes before cutting into squares, and dust with icing sugar.
