Brussel sprouts aren’t exactly everybody’s favourite vegetable, but that’s probably because they’ve never tried them like this :). When you roast brussel sprouts, they become sweet and nutty, and blend beautifully with smoky salty bacon. This recipe is super simple – which means you don’t have to spend much time in the kitchen!
What you need
8 brussel sprouts
100g diced bacon
salt + pepper
What to do
Preheat your oven to 200°C. Trim the ends and any old outer leaves from the brussel sprouts. (Don’t throw away the leaves – keep them in the fridge and make some brussel sprout chips later!)
Layer the sprouts on a lined baking tray, keeping everything in one layer. Pour over some olive oil to coat the sprouts, then season generously with salt and pepper. Sprinkle the diced bacon over the top.
Pop the tray into the oven and bake for 35 minutes, flipping the sprouts over about halfway through.
and that’s it! This dish couldn’t be any easier to make. This is such a yummy side dish to your main meal, and everyone will be fighting over the crispy leaves that fall off the sprouts while baking.
