Here’s an awesome, healthy and super simple root vegetable snack. I love these parsnip fries with a tangy greek yoghurt dressing.
What you need
4 medium parsnips, peeled and ends cut off
2 tablespoons vegetable oil
1 teaspoon paprika
1 teaspoon cumin
1 generous pinch of sea salt
parsley to garnish
¼ cup greek yoghurt
Juice of ½ lemon
What to do
Preheat oven to 220°C. Peel parsnips and slice into 1cm batons. Mix the parsnips, oil, spices and salt in a large roasting pan and lay the parsnips flat in a single layer.
Roast for 25 minutes, turning parsnips over halfway.
Meanwhile mix the dressing ingredients.
To serve, drizzle yoghurt dressing over the parsnips, sprinkle with salt and chopped parsley. Enjoy!
