An yummy easy recipe for Korean kalbi (beef short ribs) in a delicious marinade. I get my kalbi from the Korean butchers at the Lemon Grove shopping center in Chatswood. The butcher takes the short beef ribs and cuts them into thin slices leaving the bone intact – which are so yummy to gnaw on later!

Serves 4

What you need

1kg beef short ribs, thinly sliced

Marinade
1 pear, peeled, cored and chopped
½ white onion
3 tb soy sauce
3 tb sugar (I used Natvia)
1 tsp sesame oil
2 spring onions
4 cloves garlic
2cm ginger, minced
pepper

sesame seeds for garnish

Assortment of sides
baby cos lettuce cups
brown rice
bean sprouts
cucumber, sliced
kim chi
ssamjang paste

What to do

Mix the pear and onion in a food processor until it becomes a smooth paste. Add a tiny bit of water to help it along if it’s too dry.

Mix the remaining marinade ingredients in a bowl. Add the beef, and the pear and onion mixture, and mix well.

Let it marinade for at least 30 minutes or overnight.

You can then pan-fry, grill or BBQ the beef to your liking.

To serve – get a lettuce cup and smear the bottom with ssamjang paste. I love this stuff! It’s spicy and salty and adds the most delicious flavour. Top with brown rice, kim chi, bean sprouts and cucumber, and then some slices of delicious beef. Enjoy!
