If you like salt n vinegar chips, you’ll like these crispy salt n vinegar potatoes. Serve as a side dish or as I did, eat it as a main meal :) This recipe is completely easy and completely delicious, and you only need 4 key ingredients.
What you need
500g baby potatoes
1/2 cup white wine vinegar
1 teaspoon salt
2 tablespoons butter
1 teaspoon white wine vinegar
What to do
Quarter the potatoes and place in a large saucepan, add vinegar, salt and enough cold water to cover the potatoes by 1 inch. Bring to the boil, reduce heat, and simmer for 20 minutes or until tender.
Drain the potatoes and tip into a frying pan with the butter. Season with salt and pepper and fry for 8 – 10 minutes until crispy and golden.
Sprinkle with vinegar, a generous sprinkling of salt, and spring onions. Serve with dollops of sour cream, feta or goat’s cheese.
