Happy Mother’s Day to all the mums out there! These simple and delicious chocolate chip pancakes are a chocoaholic’s dream come true, so spoil yourself with a lovely treat this Mother’s Day.
Makes 12 (10cm) pancakes
What you need
1 cup self-raising flour
1 cup milk
1 tablespoon sugar
1 tablespoon baking powder
1 teaspoon baking soda
½ cup choc chips
What to do
Mix ingredients in a bowl, whisking until smooth. Leave the chocolate chips to one side.
Heat a non-stick frying pan on medium and spray with cooking oil or brush with butter.
Drop 2 tablespoons of the mixture into the pan and sprinkle with choc chips. Cook for 1 – 2 minues or until bubbles appear on the surface. Turn and cook for 30 seconds on the other side.
Repeat with the remaining mixture, brushing the pan wth oil between batches. Serve with honey and cream. Yum!
