Here is a cute appetizer idea for you! These cheesy party mice made from cream cheese (flavoured 4 different ways) with peppercorn eyes, ham ears and chive tails. It’s pretty easy, isn’t it?
Different mice flavours you can make: Pesto / Honey and Almond / Parmesan and Rosemary / Ham, Chives and Cracked Pepper
If you don’t have a silicon mouse mould, just use any small container to freeze into shapes.
Makes 6 mice
What you need
100g cream cheese
1 gelatin leaf
Pesto mice (enough for 3 mice)
1 tablespoon pesto
Honey and Almond mice (enough for 3 mice)
1 tablespoon chopped almond slivers
1 squirt honey
Parmesan and Rosemary mice (enough for 3 mice)
1 tablespoon grated parmesan
Sprinkling dried rosemary
Ham, Chives and Cracked Pepper mice (enough for 3 mice)
1 tablespoon chopped ham
1 tablespoon chopped chives
Cracked pepper to taste
What to do
Divide the cream cheese into two small bowls. Each of these bowls will make 3 mice.
Soak the gelatin leaf into cold water for 1 – 2 minutes. Meanwhile heat the milk in a heatproof jug in the microwave for 30 seconds. Add the soaked gelatin leaf (leaving out as much water as possible) and whisk until the leaf is dissolved.
Divide half the milk mixture into the two cream cheese bowls. Add your chosen cheese flavourings and mix well.
Pour the cheese mixture into the mice moulds and tap to remove any air bubbles. Use a knife to scrape any excess cheese off the top. Freeze for 45 minutes, and then refrigerate for one hour.
Then comes the fun part – decorate with ham ears, peppercorn eyes, chive mustaches and tails! Serve on a wooden board with fruit and wine.
