Here’s a surprising reason to eat broccoli soup, add a little peanut butter for a delicious rich combination. It’s a good way to use up that leftover broccoli, and this delicious soup will warm you up on a winter’s afternoon.
What you need
½ onion, diced
1 clove of garlic, minced
1 tablespoon oil
1 head of broccoli
2 teaspoons vegetable/chicken stock
200ml whole milk
2 tablespoons crunchy peanut butter
sourdough bread to serve
What to do
Fry the onion and garlic in oil for a couple of minutes. Chop the broccoli into small pieces, stalk as well. Cut the stalk into slightly smaller pieces as it takes longer to cook.
Add the broccoli to your pot, with the stock, 400ml boiling water and the milk. Bring it to the boil, then simmer gently for 10 minutes.
Blitz the soup to a smooth consistency using a stick blender or a standing blender. Add the peanut butter and stir to melt it in.
Taste and adjust seasonings to your preference with salt and pepper. Serve with warm crusty sourdough bread.
