Blueberry Coconut Lassi

A refreshing summer smoothie using ingredients I usually have in the fridge and pantry – who doesn’t love cooking without having to go to the supermarket!

Serves 1

What you need

1/2 cup yoghurt
1/2 cup blueberries
1 squirt honey
1/2 tsp vanilla essence
1/4 cup coconut milk

What to do

Pull your blender out of storage and dust it off, then plonk all the ingredients into the blender and give it a good whizz for a minute.

Pour into a glass and enjoy!
